In this paper, the hydrogel based on carboxyl propionylated soybean protein isolate (CPSPI) was prepared from soybean protein isolate (SPI) with succinic anhydride (SA) and glutaraldehyde. The carboxyl group, solubility and isoelectric point (IEP) of CPSPI were determined by the conductivity method and ultraviolet-visible light spectra. The swelling ratio (SR) of the cross-linked CPSPI hydrogel (cr-CPSPI) was mensurated in different pH value and ionic strength. The results showed that the solubility of CPSPI was much higher than SPI with SA/SPI (w/w) in neutral and alkaline aqueous medium. The number of moles of dissociative carboxyl groups per mole of CPSPI (Cn, mol/mol) is larger than SPI. The IEP of CPSPI decreased from 4.50 to 3.16 with the SA/SPI increasing. The swelling behavior of cr-CPSPI hydrogel is different in acidic, alkaline and NaCl solutions. |
